In contrast, Japan currently has no established standards for nitrate concentration in vegetables.

A 2002 study by researchers at the University of California and other institutions revealed astonishing results.
Comparing blood carotene concentrations after consuming "raw carrots," "cooked carrots," and "carrot juice," the study demonstrated that the group drinking carrot juice achieved up to 1.7 to nearly 2 times higher beta-carotene bioavailability and utilization efficiency compared to the raw carrot group.

Why does converting carrots into juice increase absorption rates?
The secret lies in breaking down the rigid "cell walls."
The reason why processing into carrot juice boosts nutrient absorption has been scientifically clarified (International Journal for Vitamin and Nutrition Research / 1998).
The nutrients in carrots are enclosed within rigid "cell walls." Human digestive juices alone cannot sufficiently break down these walls, causing valuable nutrients to be excreted without being absorbed.
Finely "grinding (crushing)" the carrots during the juicing process physically disrupts these cell walls, releasing the nutrients. Furthermore, controlled "heating" during manufacturing transforms the nutrients into a form that is even more easily absorbed by the body.
There is no need to worry that "heating destroys nutrients." It has been proven that beta-carotene is heat-stable, retaining over 90% of its content under pasteurization below 100°C.

In December 2023, a research team from Newcastle University in the UK published a paper in Critical Reviews in Food Science and Nutrition, a highly authoritative journal in the fields of food science and nutrition.
This study pooled data from 198 studies worldwide, analyzing an unprecedented dataset of more than 4.7 million individuals in total.
The conclusion was that individuals who consumed "400g of carrots per week (equivalent to about 2 medium-sized carrots)" had an approximately 20% lower risk of developing cancer compared to those who "ate no carrots at all."

Precisely because it is a habit you continue every day for your health, there is an easily overlooked factor to consider.
Vegetables, including carrots, naturally contain compounds called "nitrate ions." While essential for plant growth, concerns have been raised regarding their impact on the human body when consumed in high amounts, leading to international intake guidelines.
The WHO (World Health Organization) has set the Acceptable Daily Intake (ADI) for nitrate ions at 0 to 3.7 mg per kilogram of body weight. This is the estimated amount that can be consumed daily over a lifetime without posing a health risk.
The EU has established a strict standard for baby foods - specifically targeting vulnerable infants - setting the maximum nitrate ion concentration at 200 mg/kg (200 ppm).
In contrast, Japan currently has no legal regulations or safety standards for nitrate levels in raw vegetables. Consequently, depending on cultivation conditions, vegetables with relatively high nitrate concentrations can be found on the market.

For instance, using carrots with a nitrate ion concentration of 1,500 ppm equates to approximately 150 mg of nitrate ions per 100g.
Using the upper ADI limit for a person weighing 50 kg (approx. 185 mg) as a reference, regularly consuming multiple servings of juice - combined with nitrate ions from other dietary sources - could lead to an elevated intake level.
While typical dietary intake will not cause immediate health harm, for a "habit you maintain every day," selecting ingredients that allow you to control and minimize intake becomes essential.
